I know that's right, but I've never really understood why - is it as simple as ("hat of bob"=> "bob's hat") so ("sleep of one night" => "one night's sleep"), or is there more to it than that?

Yes - the sleep of the night - night's sleep, the paper of today - today's paper.

Shaw would be proud. He (at least sometimes) refused to use apostrophes in the genitive case, either - so there is a canonical example of this grammar...
